Ingredients
  

  • 1/3 cup Extra-virgin olive oil or coconut oil
  • 1/3 cup Honey
  • 2 Eggs
  • 3-5 Ripe bananas about 1.5-2 cups
  • 1/4 cup Milk
  • 1 tsp Baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup ground flax seeds
  • 1/4 cup rolled oats
  • 1/8 cup chia seeds
  • 1 1/3 cup fresh milled flour hard red wheat berries and hard white wheat berries will do! (hard white makes for a softer loaf)

Method
 

  1. Gather all of your ingredients
  2. Preheat your oven to 350 degrees F and prepare a loaf pan by lightly greasing it with olive oil or lining it with parchment paper
  3. We like to use the unbleached parchment paper since it is free of some of the chemicals found in traditional parchment paper
    Do you see any scratches in your non-stick pan? If so, it is probably time to get a new one. Those tiny scratched can leak harmful chemicals called PFAs into your body.
  4. In a large mixing bow, whisk together the freshly milled flour, baking soda, salt, cinnamon, and seeds.
  5. In a separate bowl, mash bananas with a fort or meat chopper until smooth-ish
  6. Leaving some banana chunks can make the load more airy .
  7. Add the mashed bananas, olive oil, honey, milk, and eggs to the dry ingredients
  8. Stir until combined
  9. Pour the batter into the prepared loaf pan and spread evenly
  10. Bake until the loaf is golden brown and toothpick or knife inserted into the center is clean (around 50-60 minutes depending on your oven)
  11. Allow the banana bread to cool in the loaf pan for 10-15 minutes before transferring to a rack to cool completely. Slice, serve, and enjoy!
