- Preheat the oven.
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or aluminum foil.
- Make the lemon dressing.
- In a small bowl, combine the lemon juice, salt, pepper, garlic powder, and 1 tablespoon of olive oil. Stir until well combined.
- Roast the vegetables.
- Place the cherry tomatoes, broccoli, zucchini, and yellow squash on the prepared baking sheet. Drizzle lightly with olive oil and season with salt to taste. Toss to coat. Spread the vegetables into an even layer and roast for 15 minutes.
- Prepare your starch.
- While the vegetables are roasting, prepare your brown rice, baby potatoes, or sweet potatoes according to your preferred method.
- Add the salmon.
- Remove the baking sheet from the oven and toss the vegetables. Create space in the center of the pan for the salmon fillets. Place the salmon on the baking sheet and pour the lemon dressing over the top. Add lemon slices over each fillet.
- Bake the salmon.
- Return the baking sheet to the oven and bake for another 12–15 minutes, or until the salmon reaches an internal temperature of 145°F and flakes easily with a fork.
- Finish and serve!
- Remove the salmon and vegetables from the oven. Sprinkle the salmon with feta cheese and serve alongside your choice of brown rice, baby potatoes, or sweet potatoes.
